Eating Healthy — Ice Cream Without Regrets

General No Comments »

Picture this. It’s a hot, sunny day. You’re hungry and just want to eat something cold and creamy. So what do you do? You go to the freezer and pull out that plastic pail with a cold metal handle. You think to yourself, "I’ll just have a little bit". But before you know it - your bowl is heaping with the stuff. Then right before you put the lid back on the pail, you take one more scoop and put it straight into your mouth.

Does that sound familiar to you? Have you ever looked at the ingredients in ice cream? You would think it should be as simple as cream and sugar, right? Why do so many companies use high fructose corn syrup? Or carrageenan? Or Mono and Diglycerides?

It turns out; you’re basically eating a bowl full of chemicals. If you knew that ahead of time, would you still try to cool off with that stuff? Would you give those chemicals to your children? What are your options?

My personal opinion: Buy yourself an Ice Cream Maker. Find one that will work for you. I have one that has a frozen bucket that just goes in the freezer. No ice or salt required. It only takes about 20 minutes to make the ice cream. Buying an ice cream maker could be one of the best investments that you make for your health, and your kitchen. You can make any flavor you want; you can use your own ingredients, it tastes great; and you’re kids will love to watch it being made!

My favorite recipe is the one that came from my ice cream maker’s manual. There are only four simple ingredients: milk, sugar, half and half, and vanilla. Simple.

To make it as healthy as possible, I used organic, non-homogenized milk, organic evaporated cane juice, organic half and half, and lastly organic vanilla. My family loves the ice cream that I make. We have it several times a week. I enjoy it with some fruit on top or even a little peanut butter on the side!

I never have to worry about my kids eating a lot of it, because I am happy with every ingredient in there. I know the ice cream they are eating for their bed time snack is healthy and delicious. It makes me happy to know that they are not being poisoned with any chemicals from store bought ice cream. I give them the best that I can give them.

As always, when cooking use the best ingredients you can afford. Buy organic whenever possible. Do your best to keep those nasty toxins out of your diet. Use raw and unprocessed whenever possible. Eat healthy, feel healthy, be healthy. Enjoy life.

Healthy Desserts You Can Make in Minutes

I don’t know how you feel, but desserts are one of my most favorite things to eat, and the more healthy desserts that are available to me, the better I feel. I feel better about eating them, and I feel better because they are providing some nutrition to my body, not just empty calories.

It can be hard to think of healthy desserts on your own, especially when your cravings tell you they want something unhealthy. To make it easier for you, I’m going to provide a few examples for you of some healthy desserts…

I like to call this one Honey Nut Goodness…

First, microwave 2 tablespoons of peanut butter of your choice, in a heat proof bowl for 20 seconds.

Let it cool slightly, then mix it with an equal amount, or less, of whipped topping.

Then crush 2 whole honey graham crackers (whole wheat if you can get them) and put them into a bowl, reserving about 1 teaspoon.

Top the crumbs with the peanut butter mixture, and then sprinkle with the remaining crumbs.

This is so yummy!

Ok, the next of the healthy desserts I call Sloppy Berry Angel…

First, take a slice of angel food cake. You may want to put it in a bowl as this can get messy.

Take a variety of berries, as many as you want, either fresh or frozen (thawed)…I like to use strawberries, blueberries and blackberries, put 1/2 of the berries aside.

Put the other 1/2 of the berries into a small sauce pan with just a little water, no more than 1/4 cup… heat on low to medium until the mixture comes to a boil, then stir and mash the fruit with the back of a spoon.

Cool slightly then pour over the angel food cake, and top with the remaining berries and a dollop of whipped cream if you like.

Enjoy!

If you use your imagination, I know you can also come up with many different healthy desserts to enjoy.

If you need some ideas, healthy desserts can contain things like peanut butter, granola, fruit, jello, low sugar breakfast cereal, a drizzling of chocolate or caramel sauce, graham crackers, low fat yogurt, etc.

Think up some easy to make healthy desserts and add them to your menu. Your body will thank you.

What Do You Know About Kids Eating Healthy?

Fast food is a big part of modern life these days, making it very hard to teach a child how he or she should eat healthy. The cheapest and easiest foods are those that are commonly the least healthy. If you give your child the choice between healthy food and junk food, you ordinarily won’t like the results.

Even though it isn’t possible to get a child to like all healthy foods, there are some ways to get your child to try and hopefully like at least a few of them. You can be as creative as you like, as getting kids to eat healthy foods can be a little harder than you may think.

- Sneak the healthy food in. Even though it would be great if your kid understood the importance of fruits and vegetables, this isn’t always possible.
If you can’t get them to eat good food willingly, there are ways to sneak them in, such as making muffins out of bananas or apples, or pizza with spinach on it.

- Call fruits and vegetables by funny names. You can refer to broccoli as “trees”, making them more fun to eat. There are many different names you can call fruits and vegetables, even making up your own if you prefer. Most kids prefer to eat foods that sound fun.

- Make the nutrients taste better. Ranch dressing is great for broccoli, while peanut butter is a great topping for celery. There are various combinations
for vegetables that can make them taste much better. You can let your child pick a topping for a vegetable; even if it’s something you wouldn’t normally like yourself.

- Dress the vegetables up. Just as much as calling them names help kids eat healthy foods, making them look funny also helps. You can do this by making funny designs on the plate, or setting them up to look like souls. Although some parents don’t like their kids playing with their food, sometimes it helps to get them to eat healthier.

There are various ways to make your kids eat healthier, but to make them enjoy it also has to be fun as well. This isn’t always an easy task, because kids commonly don’t like nutrients that are good for them. It can however, be done with a bit of creativity. Hopefully, doing this will help your child develop a love of healthy nutrients for the rest of their lives.
